Got any left-over mashed potatoes? Need something interesting to do with them? Bubble and squeak is an amazing option here. Made with vegetables, left-over pieces of meat, left over mashed or boiled potatoes, and animal fat, this is an amazing, tasty dish.
In retrospect this is probably easier on a non-stick pan.

Recipe (for two people):

animal fat for frying
left over meat or bacon (I used 4 strips of bacon)
1 cup, 50 grams, or whatever vegetables, such as boiled cabbage, shredded
400g or 2 cups leftover mashed potatoes or crushed boiled potatoes.
1.2 onion, finely chopped.
Heat fat until hot. Add meat and start to brown.
Add onion and cook until it starts to brown.
Add vegetables and cook until they start to brown.
Add potatoes and mix well and then press into a patty and cook slowly until a nice crust has formed. Be patient.
Turn over, cook again until you have another crust and then divide and serve.
