Today’s vlog is a fun little mix of everything I love! 🤍
I start the day with a lovely brunch date with a friend, then head home to do a mix of regular tasks and small projects. I water my houseplants and crochet a tiny beanie for my plant dog (yes… my ceramic dog that hangs on my plant 😄). After that, I dive into reorganizing my dry-food kitchen cabinets — very satisfying (at least in the end—there was a moment when my kitchen was an absolute wreck.
With Christmas coming up, I continue working on my Christmas puzzle before making a light dinner: traditional Finnish Rosolli with a creamy sauce— something simple since I’m still full from brunch (you have to get your money's worth right!). I wrap up the day with a quick surface clean in the kitchen before settling in for the night.

Recipe:
Rosolli:
3 boiled potatoes
3 boiled carrots
3-4 boiled or pickled beetroot
(1 gherkin)
(1 sour apple)
1 small onion
(salt, white pepper)
(piece of herring fillet)
Sauce:
1-1 1/2 dl whipping cream
1 tsp spirit vinegar
pinch of sugar
(beetroot broth)
1. Peel the root vegetables and onion. Peel the apples and remove the seeds.
2. Cut all the vegetables (herring into small pieces) into even-sized cubes and place them in a bowl.
3. Season lightly with salt and pepper. Mix gently. Let the rosolli cool.
4. Whip the cream for the sauce until stiff peaks form and season with vinegar and sugar. Colour the sauce with the beetroot stock.
