Fresh corn on the cob
Mayonnaise
Cotija cheese (or feta as a sub)
Lime juice
Chili powder or Tajín
Optional: butter & cilantro

Corn on the Cob
Mayo
Parkay
Cotija Cheese
Chili Powder
Lime
Tapatio or Mexican Style Hot Sauce
Cilantro

Cooking Instructions

Boil or Grill Corn until tender. Drain corn and allow to cool slightly. Apply Mayo and Cotija Cheese. Sprinkle Chili Powder and Tajin. Top with Parkay and add additional chili powder and tajin if desired. If you want more Lime flavor squeeze fresh lime on top.

Variations
Using melted butter for a elevated flavor. Cook or grill corn then before adding mayo add melted butter to corn and then assemble the rest of ingredients.

Using lime in the mayo. If you don't have tajin or access to it you can add fresh lime to your mayo for an even application and delicious flavor.

On the grill
Grill Corn until tender with a little char. Follow the same assembly.
