Inji Puli, also known as Ginger Pickle, is a popular South Indian condiment made with fresh ginger, chilies, and spices. Here's a simple recipe:
Ingredients
200g fresh ginger, peeled and chopped
10-12 green chilies, chopped
tamarind paste
jaggery syrup or sugar
1/2 teaspoon turmeric powder
1 & 1/2teaspoon red chili powder
1/2 Heeng or kayam & Fenugreek powder
Salt, to taste
2 tablespoon oconut oil
Instructions
1. *Prepare the ginger and chilies*: chop ginger and green chilies roast in coconut oil till little brown
2. *Add tamarind paste cook for sometime then add jaggery syrup
3. Add spices and salt
4. *Cook until the mixture thickens.
5. *Cool and store*: Let the Inji Puli cool completely before transferring it to an airtight container. Store it in the refrigerator.
Tips
Adjust the amount of chilies and spices according to your taste preferences.
You can add other ingredients like garlic or curry leaves to the Inji Puli for added flavor.
Inji Puli can be served as a condiment with rice, dosa, or idli.
