Buttercream is a standard in cake making. While there are a few types of buttercream, Italian buttercream is my favorite. I cover most of my cakes in Italian buttercream. Even if I finish with fondant, the buttercream will give me that smooth edge to start with. So next time you are making a cake, try it with an Italian buttercream finish and just keep baking!
4 oz Egg Whites
8 oz Sugar
16 oz Butter
In this video, I am using a 4.5 qt tilt-head Kitchenaid to make this size batch, which should be enough to cover an 8" cake. When I make a double batch, I use my 6 qt Professional 600 series.
