Wondering how to make Portuguese sweet rice "Arroz Doce" without eggs and dairy? My vegan Portuguese sweet rice is creamy, comforting, and it's even thriftier than the traditional! Made with simple ingredients and filled with all the same flavour I loved from my avó's!

Ingredients: Vegan Arroz Doce (5 cups)
1 cup (186 g) arborio or short grain Italian style rice
2 cups (474 ml) water
Pinch of salt
1 tbsp vegan butter
2 cup (486 ml) soy milk + 2 tablespoon (for the starch slurry)
½ tsp lemon zest (can use frozen)
⅓ cup (64 g) cane sugar (or more to taste)
½ tsp vanilla extract
2 tbsp arrowroot starch (or cornstarch)
Pinch of turmeric (for a bit of yellow colour)
1 tsp cinnamon (for the topping)
