Just outside of La Estancia, in the mountains above Puerto Vallarta, sits Hacienda Don Lalín — one of the first tabernas you’ll find on the road to Mascota and San Sebastián del Oeste.
Here, Maestro Raicillero Eduardo "Lalo" Sanchez keeps the fire of Raicilla de la Sierra alive. His distillery sits high above a valley with a river running below — quiet, peaceful, and filled with the smell of smoke and agave.
Using Agave Maximiliana, he cooks nearly 3,000 kilos at a time in a deep stone oven heated to 1,000°C with oak wood, creating the signature smoky flavor that defines raicilla. After two days sealed underground, the roasted agave tastes like sweet potato and begins wild fermentation for six days before distillation.
Hacienda Don Lalín focuses on quality, not quantity. No extra sugars. No shortcuts. Just patience, fire, and tradition passed down through generations.
