Raicilla Tabernas | Costa – Episode #3: Taberna Maluvaco, Chacala, Cabo Corrientes, Jalisco

On the coast of Cabo Corrientes, tucked deep in the tropical heat of Chacala, sits Taberna Maluvaco — home to Maestro Raicillero Palo Rodríguez Lorenzo, a man who has carried the coastal raicilla tradition forward longer than anyone else in this region.

This episode documents the first cook of the season, a moment that only happens once a year. Some of the agaves used in this batch were harvested four to six months ago and left tumbados in the field so their sugars concentrate inside the piña. Others — the ciego and capon agaves — were left standing until just before the quiote burst through, then cut and rested for a year or more. These small details shape the flavor, and Palo knows exactly how to read each plant.

Inside the taberna, the process is old-school coastal craft:
• The oven is lined stone by stone to hold heat.
• The fire is fed with local wood, never gas.
• The agaves are loaded by hand, each type placed with purpose.
• The entire cook is sealed with palm leaves and canvas, then left for two nights to absorb smoke, heat, and sweetness.

As Palo explains, when agaves are left tumbados, the sugars migrate from the pencas into the heart — creating deeper aroma, more sweetness, and a richer cooked flavor. It’s knowledge passed down through elders, tested across decades, and proven every season.
