Ingredients:
For Making Sakkarai Pongal :
Ponni Raw Rice - 1/2 cup
Water - 2 cups for boiling (4 to 5 whistles)
Jaggery - 3/4 cup
Water - 3/4 cup for jaggery Syrup
Ghee - 4 tbsp
Cashews - as required
Raisins - as required
Cardamom Powder - 1/4 tsp
Saffron - 1 pinch
For Making Coconut Rice
Grated Coconut - 1 & 1/2 cup
Mustard Seeds - 1/2 tsp
Urad dal - 1 tsp
Channa dal - 1 tbsp
Ginger - 1/2 tsp (chopped)
Green Chillies - 2
Asafoetida - 1/4 tsp
Curry leaves - few
Salt - 1 & 1/4 tsp
Boiled rice - as required
For Making Tomato Rice
Oil - 1 & 1/2 tbsp
Mustard seeds - 1 tsp
Urad dal - 2 tsp
Onion - 3/4 cup (chopped)
Green Chillies - 3
Curry leaves - few
Tomatoes - 1 & 3/4 cup
Asafoetida - 1/4 tsp
Chopped Carrot & potato - 3/4 cup
Turmeric Powder - 1/4 tsp
Butter Beans - 1/2 cup (boiled)
Kashmiri Chilli powder - 1 & 1/2 tsp
Boiled Rice - as required
Table salt - 3/4 tsp
Fried Bread - as required
For making Semiya Payasam
Sago - 1/4 cup (soak it for 1 hr.)
Water - 2 cups
Ghee - 1/2 tsp
Semiya - 1/4 cup
Bolied Milk - 2 & 3/4 cups
Sugar - 1/2 cup
Cardamom powder - 1/4 tsp
Ghee - 1 tsp
Cashews & raisins - as required
For Making Lemon Rice :
Groundnut Oil - 1 & 1/2 tbsp
Mustard Seeds - 1/2 tsp
Cashews - as required
Green Chilli - 1
Red Chillies - 2
Lemon - 1 (big)
Curry Leaves - few
Asafoetida - 1/4 tsp
Turmeric Powder - 1/4 tsp
Boiled Rice - as required
Table salt - to taste
For Making Mint Chutney
Curry leaves - 1 handful
Mint - 1 handful
Coriander leaves - 1 handful
Green Chillies - 6 no.
Oil - 1 tbsp
Urad dal - 2 tbsp
Asafoetida - 1/4 tsp
Grated Coconut - 1/2 cup
Tamarind - small piece
Rock salt - 1/2 tbsp
For Making Kaaparisi
Valan Arisi - 200g (soak it for 12 hrs.)
Chopped Coconut - 1/2 cup
Roasted Channa dal - 3 tbsp
Ghee - 1/4 tsp
Jaggery - 3/4 cup
Water - 1/4 cup
