This Lebanese deep-fried treat is like a cross between ba’at and a doughnut. Commonly eaten for breakfast, they can also be dusted with icing sugar for a delightful dessert.
Ingredients:
300g bread flour
100g wholemeal plain flour
14g yeast
2 tsp aniseed powder
120g caster sugar
2 tbsp milk powder
1 cup lukewarm water
Instructions:
Step 1: Activate the Yeast
Combine the yeast and lukewarm water in a bowl.
Allow the mixture to sit for about 10 minutes to activate.
Step 2: Prepare the Dough
In a stand mixer, combine the bread flour, wholemeal plain flour, aniseed powder, caster sugar, and milk powder.
Once the yeast has activated, add it to the mixer.
Knead until the ingredients are well incorporated.
Transfer the dough to a large, oiled bowl. Cover and allow to proof for at least two hours.
Step 3: Shape the Dough
Once the dough has doubled in size, portion it into approximately 16 balls.
If the dough is too sticky, oil your hands to handle it better.
Take each ball and divide it in half. Using your hands, roll each half into a short rope.
Roll one of the dough ropes in sesame seeds.
Bring the ends of each rope together and twist them around each other. Pinch the ends to keep them together.
Place the twists on an oiled tray, cover, and let them rest for another 15 minutes.
Step 4: Fry the Zalabiyeh
Heat your frying oil to about 170°C (340°F).
Fry the zalabiyeh twists in small batches for about 3 minutes or until golden brown.
Step 5: Serve
Optionally, dust with icing sugar for a sweet treat.
Enjoy them fresh, as they are best eaten immediately.
Tips:
For a traditional shape, create flat rectangular pieces with holes.
These treats are best enjoyed fresh and may not last long, given how delicious they are!
