This week we are making Raspberry Chipotle Pork Belly Burnt Ends on our Weber Kettle!
We started off with a five pound Pork Belly. We cut it in half for this cook but you can cook it all depending on the crowd you are feeding. The first thing we did was slice it into strips about an inch wide. Next we cut those strips into bit sized cubes. Move them into a foil pan and season with your favorite BBQ rub. We used our O.G. Rub. Make sure they are all well coated with seasoning and let them sweat for about 30 minutes.
While they sweat, we fired up our Weber Kettle. We used the snake method. This basically means you start at one end with a few lit coals. As the coal burns new coals will be lit. You can place a few wood chunks throughout for smoke flavor. We used apple here. We also like to set a foil pan in the middle of the grill. We put some apple juice in it to act as a heat sink and also keep our grill clean. This Weber doesn’t have a thermometer so we had the vents between half and a quarter open on top and bottom.
Once the grill us up to temperature, we placed them on a wire rack and set them on the pit. Let them cook in the smoke for two hours. After two hours, place them in a foil pan with butter, honey, maple syrup and more rub. Cover with foil. Return to the smoker and cook until tender.
Once tender, let them cool for 10 minutes and sauce with Raspberry Chipotle Sauce. Return to grill and cook for 5 minutes.
Ingredients
2-3 pound pork belly
Sweet & Savory O.G. Rub
Blues Hog Raspberry Chipotle
1 stick of butter
Maple Syrup
Honey
Directions
Slice pork belly into one inch wide strips
Cube into bite sized pieced
Place in aluminum pan and season with O.G. Rub and place on wire rack
Fire up Weber Kettle with snake method. Set vents to half to a quarter open. Use apple wood for smoke flavor
Put burnt ends on the smoker (leave them on the rack)
After two hours, wrap in a foil pan with butter, maple syrup, honey and more rub
Return to pit and cook until probe tender
Once tender, remove and let cool for 10 min
Sauce and return to pit to set glaze for 5 minutes
