Set Dark mode in the settings by going to Tools ► Options ► LibreOffice ► Appearance and select Dark (or System).
This gives you a dark or black background, along with dark menus, toolbars, etc.
In newer versions of Calc, there are improved options such as using a white document background, customizing text colors, and changing toolbar sizes and icons.
If you'd like to automatically switch to dark mode during sunset, use the f.lux app from the Microsoft Store. It's also available from their website https://justgetflux.com
Another app I use now to set Windows dark mode automatically is Microsoft PowerToys, which is also free in the Microsoft Store.
