GREEN LENTIL BHAJIYA PLUS BONUS CHUTNEY RECIPE by EVERYTHING BUT PASTA (RECIPE BELOW!):
I N G R E D I E N T S :
1 cup split green lentils
1 medium onion, cubed
1 medium potato, cubed
1/2 bunch cilantro, chopped finely
3-4 green chillies, optional
salt to taste
D I R E C T I O N S :
Wash and soak the lentils overnight or atleast 4-6 hours.
In the morning, wash the lentils and remove as many peels as possible.
Then drain the water and add it to a food processor. Add the onions, potatoes and the chilli. Pulse for a few seconds. Scrape the sides down and mix at the highest speed until it becomes a fine puree.
Remove to a bowl, beat it vigorously and then cover and refrigerate for 30 mins.
After 30 mins, remove from the refrigerator and add chopped cilantro and salt. Mix well.
In a wok, add 3-4 cups of oil and heat it on a medium flame. Let the temperature of the oil rise to 350 degrees F.
Using an ice cream scoop, drop the bhajiya’s in the oil and fry for 2-3 mins. Turn and let it cook for another 2-3 mins until golden brown. Remove to a wire rack.
BONUS RECIPE!!!! COCONUT CHUTNEY:
I N G R E D I E N T S :
1/2 fresh coconut or 1 cup dessicated coconut
1/2 bunch cilantro, coarsely chopped
4-5 green chillies
4-5 tbsp lemon juice
salt to taste
water as needed
D I R E C T I O N S :
Crack open the coconut, remove the meat and cut into slivers.
Add the coconut, cilantro, chillies, lemon juice and salt to the blender. Then blend everything together, you may need a 1/4 to 1/2 cup of water if there is not enough liquid. Scrape down the sides several times. Blend until a fine mixture forms.
Remove to a bowl and garnish with a few leaves of cilantro. Serve.
