Crispy Vada Pav
Ingredients:
For Vada (Potato Filling):
3 boiled potatoes (mashed)
1 tsp mustard and cumin seeds
1 tbsp ginger-garlic-green chillies paste
½ tsp turmeric powder
Salt to taste
1 tbsp oil
Fresh coriander (chopped)
Lemon juice (optional)
For Besan Batter:
1 cup besan (gram flour)
1tsp ajwain
Salt to taste
Water (to make thick batter)
A pinch of baking soda (optional)
For Frying:
Oil for deep frying
For Serving:
Pav buns
Green chutney
Dry garlic chutney
Fried green chilies
Method:
1. Prepare Vada Filling
2.Heat oil in a pan. Add mustard and cumin seeds and let them splutter.
3.Add green chilies + ginger+ garlic paste. Sauté well.
4.Add turmeric and mashed potatoes.
5.Add salt, mix well, and cook for 2–3 minutes.
6.Add coriander and lemon juice.
7.Let the mixture cool and shape into round balls.
2. Prepare Batter:
Mix besan, salt, and water to make a smooth thick batter.
Add a pinch of baking soda if needed.
3. Fry Vadas:
Heat oil on medium flame.
Dip each potato ball in batter and deep fry until golden and crisp.
4. Assemble Vada Pav:
Slit pav horizontally.
Apply green chutney and garlic chutney.
Place hot vada inside.
Serve with fried green chili.
Tips
Fry on medium flame for crispy vadas.
Use fresh pav for best taste.
