Mary Berry's Fraisier Cake is the ninth technical challenge in The Great British Bake Off (GBBO) Season 3. An incredibly pretty French cake filled with delicious strawberries and crème pâtissière. Tricky to achieve but certain to impress

I was so inspired by GBBO that I wanted to try all the technical challenge recipes.
GBBO S03E09 - Pâtisserie week - Mary Berry's Fraisier Cake
GBBO Brief:
[Mel] Bakers, I can now reveal to you that we are going to be asking you, please, to bake the famous celebration cake, which is of course French, and it's called a fraisier. "Frasier," in British. Now, this has got to be visually stunning, OK? It's all about the layers of sponge, strawberry and creme patissiere. It's the semifinal, so Mary and Paul will be requiring nothing short of perfection.

Ingredients for Genoise Sponge
------------------------------
1. Caster sugar - 125 grams/4½ oz
2. Eggs- 4
3. Lemons zest - 2 lemons, finely grated
4. All purpose flour - 125 grams/4½ oz
5. Baking Powder - 3/4 teaspoon
6. Salt a pinch
7. Unsalted butter - 50 grams/1¾ oz,melted & cooled
Ingredients for pastry cream
----------------------------
1. Milk - 600 ml/20 fl oz
2. Vanilla essence - 2 teaspoon
3. Eggs - 4
4. Egg yolks - 2
5. Caster sugar - 180 grams/6¼ oz
6. Kirsch - 1 tablespoon
7. Cornflour - 100 grams/3½ oz
8. Butter - 150 grams/5½ oz, cut into cubes & room temp
Ingredients for the lemon syrup
-------------------------------
1. Caster sugar - 75 grams/2¾ oz
2. Lemon Juice - 2 lemons
Ingredients for marzipan
------------------------
1. Almond flour - 100 grams/ 1 Cup
2. Powdered Sugar - 60 grams/ 1/2 cup
To finish the cake
Dark chocolate, for decoration
Medium sized strawberries cut half
