HOW TO MAKE VEGAN SMOKED CHICKEN WINGS (using homemade seitan)

I'm sharing the best seitan chicken wings recipe you will ever have. Summer is really not that far, so it's time to dust off the grill and blow some minds with this INCREDIBLE SMOKED VEGAN BUFFALO WINGS recipe using homemade seitan. This recipe will certainly turn some heads with the look, smoky smell and amazing flavor of a proper Texas BBQ.
These vegan chicken wings comes with its vegan diping sauce and vegan homemade rub but you can use any vegan sauce and dry rub you like.
Seitan (Buffalo Wings)
Ingredients
700g of white flour (All purpose)
375ml of cold water
Method
Mix the two ingredients together into a dough. Knead the dough for at least 15 to 20min.
Submerge the dough in 2l or more cold water.
Then wrap the bowl with a clean cling wrap.
Rest it for 1 hour
Wash the doughs till there's no starch remaining.
Let it rest for 15min
Mother Sauce
Ingredients
20ml Olive oil
4 Cloves fresh garlic (with peels & roughly chopped)
1 large Onion (with peels & roughly)
1 large Carrot (with peels & roughly chopped)
50g chopped broccoli (roughly)
30g Fresh tumeric (roughly chopped)
30ml Lemon juice (freshly squeezed)
1/2 Tsp marmite
3 Drops liquid smoke
5g Fresh peppercorn
5g Dijon mustard
50g ketchup
5g Hoisin sauce
1ltr Water
30g Vegan chicken stock
10g Hot dog mustard
Method
Heat up the oil over a medium heat and add all the veggies.
Braise all veggies till soft and golden brown.
Add the remaining ingredients and simmer for 3 hours, add water if necessary.
Pass the mixture through a fine sieve before using to baste meat before serving
HOUSE RUB
20mins Olive oil
20g Mascovado sugar
50g Salt
10g Fennel seeds (coarse)
*5g Black pepper (ground)
5g Cumin powder
30g Smoked paprika
10g Garlic powder
10g Onion powder
5g Dried thyme
5g Chilli flakes
5g Caynne powder
Method
Mix all the ingredients and heat up a dry pan for a few minutes, add the rub while shaking the pan, until the spices release an aroma. Tip into a bowl and leave to cool.
