Hey Guys! Welcome to Vlogtober Day 22, 2025.
I will be doing a copy and paste with most of the same info in the description of both videos since they both cover Chow Chow.
This video is Part 2 of my How To Make Chow Chow videos.
It’s the Fall season and I can remember eating my Grandma Sarah’s Chow Chow. It was sweet and spicy and green with red pepper flakes in it. We loved it so much and we ate it on beans and greens. I even remember once when Papa Cecil put it on a sandwich that had everything under the sun on it. Guess what, it was delicious 😋
I couldn’t get my hands on Grandma’s recipe but ours that my Sister Cynthia and I made came out pretty good.
I found out by trial and error that we used too much salt when we added two cups of it in order to bring out the liquid from the vegetables once we had everything chopped. I researched that some people rinse theirs after its sat overnight.
Next time we wont add but 1/2 cup of salt and even then I’ll probably rince it. I dont ever remember Grandma Sarah’s tasting like salt was in hers. So here goes.
Cynthia and Jackie’s Chiw Chow Recipe:
1 Dozen Medium Onions
1 Dozen Sweet Green Peppers
1 Dozen Sweet Red Peppers
1 Quart Chopped Cabbage
2 Quarts Chopped Green Tomatoes
1/2 Cup Salt
6 Cups Sugar
2 1/2 Quarts Vinegar
4 Tablespoons Ground Mustard
4 Tablespoons Mustard Seed
1 Tablespoon Turmeric
1 Tablespoon Ground Ginger
3 Tablespoons Celery Seed
4 TablespoonsWhole Mixed Pickling Spice ( Tied in bag )
If you want hot spicy chow chow add 3 tablespoons of crushed red pepper flakes. Start with small amounts and add more to suit your taste.
Chop onions and peppers using a grater or an old school hand crank chopper. The kind that attaches to the table.
Combine all if the vegetables in a large bowl or pot and mix together. Add the salt then mix everything together. Let the mixture sit overnight on the table ir countertop covering with a towel.
The next morning drain the liquid off of your vegetables.
Place the vegetables into a colander in the sink and rinse the salt off of your vegetables. Let the excess water drain out of the vegetables while you get the brine ready.
In a large pot combine sugar, spices and vinegar and bring to a boil. Once simmering let simmer for 20 minutes. Add vegetables and bring everything back up to a simmer. Cook until the vegetables are your desired consistency ir tenderness.
Once done remove tgw spice bag and pack oin hot jars and seal. Place the lid on tgw jar then add the ring finger tight.
Let cool overnight then check your seals and tighten the rings and label. Wipe down jars to clean. Enjoy!
