鳳梨豆腐乳
食材:
1. 豆腐 700g
2. 鳳梨 500g
3. 糖 500g
4. 海鹽 50g
5. 30度以上米酒 30 cc
步驟
1. 豆腐切2到3公分立方
2. 豆腐放容器內, 上壓重物, 冷藏2天
3. 放室外曬乾至少一天
4. 鳳梨切小塊加糖冷藏3小時
5. 一層鳳梨,一層豆腐放入容器
6. 加入米酒蓋過鳳梨和豆腐
7. 放陰涼處發酵3個月以上

Pineapple fermented Tofu
Ingredient:
1. Tofu 700g
2. Pineapple 500g
3. Sugar 500g
4. Sea Salt 50g
5. Rice wine [ 30% Alc ] 30 ml
Steps:
1. Cut tofu into 2 to 3 cm cubes
2. Put tofu in a container, put heavy plates on it, refrigerate 2 days
3. Expose to sunlight at least one day
4. Cut pineapple into small pieces, add sugar and refrigerate 3 hours
5. Put a layer of pineapple and a layer of tofu into the container
6. Add rice wine to cover pineapple and tofu
7. Put it in a cool place to ferment 3 months
