How to Make and Prebake a Pie Crust

My favorite pastry for lemon meringue and other pies that require a prebaked crust. The dough is easy to make/roll out. I hope the video is helpful to you. Ingredients are listed below (click "show more"):

All-Butter Crust for 8- or 9-inch pie:
1 1/2 cups all-purpose flour
1/2 teaspoon kosher salt
Optional for a sweet crust: 2 tablespoons granulated sugar
1/2 cup (113g) cold, diced butter
1 egg yolk beaten with 2 tablespoons ice cold water
Extra ice cold water as needed
For sealing the baked crust: 1 egg white beaten with 1/4 teaspoon kosher salt
