Ingredients
For the Chicken Fillet
• All-purpose flour – ½ cup (60g)
• Chicken breast, sliced into thin fillets – 520g (about 1 lb 2 oz)
• Cornstarch – 3 tbsp (24g)
• Egg – 1 large (55g)
• Fish sauce – 2 tbsp (30 ml)
• Garlic powder – ¼ tsp (1g)
• Black pepper – ¼ tsp (1g)
• Cooking oil – enough for shallow frying
For the Deluxe Ala King Sauce
• Unsalted butter – 50g (3½ tbsp)
• Onion, finely chopped – ½ medium (50g)
• Carrots, finely diced – 2 tbsp (20g)
• Green bell pepper, diced – 2 tbsp (20g)
• Red bell pepper, diced – 2 tbsp (20g) (optional, for colour)
• Button mushrooms, sliced – ½ cup (50g)
• All-purpose flour – 2 tbsp (16g / 30 ml / 0.13 UK cups / 0.12 US cups)
• Chicken stock – 1 cup (240 ml / 0.85 UK cups / 1 US cup) (use low-sodium if possible)
• Chicken bouillon cube – ½ cube (5g) (skip if stock is already well-seasoned)
• All-purpose cream – ½ cup (120 ml / 0.42 UK cups / 0.5 US cups)
• Salt – start with ¼ tsp (1.5g)
• Black pepper – start with ¼ tsp (1g)
• Chopped parsley – 1 tbsp (2g) (optional)
• Optional: 1 tbsp Marsala wine, dry sherry or white wine for extra depth
