Ingredients
For the Filling
• Ground beef – 1 lb (450 g)
• Onion, chopped – 1 medium (about 150 g / 1 cup US / ¾ cup UK)
• Garlic, minced – 2 cloves (2 tsp / 10 g)
• Taco seasoning – 2 tbsp (about 18 g / 2 UK tbsp / 2 US tbsp)
• Tomato sauce (or passata) – 1 cup (240 ml / 8 US fl oz / 7 UK fl oz)
• Salsa (medium or hot) – 1 cup ( 8 US fl oz / 7 UK fl oz ≈ 250 g)
• Black beans, rinsed – 1 cup (170 g / ½ UK cup / ½ US cup drained)
• Sweetcorn kernels – 1 cup (160 g / ½ UK cup / ½ US cup)
• Salt & pepper – to taste
For the Layers
• Flour or corn tortillas – 8 medium (about 20 cm / 8 in each)
• Sour cream – 1 cup (240 ml)
• Shredded cheese (Cheddar, Monterey Jack, or Tex-Mex blend) – 2 cups (200 g / 1 ½ US cups / 1 ¼ UK cups)
• Fresh coriander (cilantro), chopped – 2 tbsp (6 g)
Cover with foil and bake at 375 °F (190 °C) for 25 minutes.
Remove foil and bake uncovered 10 minutes more until golden and bubbly.
Salsa
Ingredients
2 medium tomatoes, finely diced
1 small onion, finely diced
1 jalapeño or green chilli, minced (optional seeds)
1 clove garlic, minced
2 tbsp tomato paste
1 tbsp lime juice (or 1 tsp vinegar)
1 tbsp chopped coriander (optional)
½ tsp cumin
½ tsp smoked paprika
½ tsp chilli powder
¼–½ tsp salt (to taste)
Pinch black pepper
1–2 tbsp water, only if needed
