On this week’s Taste of Retirement, we’re taking on cajun food, more specifically a New Orleans favorite, the shrimp po boy! Now po boy sandwiches are a staple of cajun food and there are many different ways to make shrimp po boys, but ours is a super easy shrimp po boy recipe.
So, how to make a shrimp po boy sandwich? Well you need to start with fried shrimp because it’s hard to beat breaded shrimp. Now, people can get intimidated when it comes to frying shrimp in a pan but it’s really simple and really quick. You only need to let them fry for a couple minutes max before they start to get rubbery in texture. Of course, no po boy is complete with out some remoulade sauce and our remoulade sauce recipe is full of flavor.
Remoulade sauce recipe:
1 cup mayonnaise
2 tbsp Dijon mustard
1 tbsp freshly squeezed lemon juice
1 tbsp finely chopped flat-leaf parsley
1 tbsp Louisiana-style hot sauce
2 tsp whole-grain mustard
2 cloves garlic, minced
2 tsp capers, roughly chopped
1 tsp Worcestershire sauce
1 tsp paprika
1 medium scallion, finely chopped
1/4 tsp kosher salt
1/8 tsp cayenne pepper
Shrimp po boy recipe:
Toasted baguette/hoagie roll
Shredded spring mix
Remoulade sauce
6-8 breaded shrimp
