These BREAKFAST ENTOMATADAS is usually the breakfast I choose when entertaining family or friends, the are so easily assembled and theyvare delicious and can go a long way when serving several people. I love that I can choose the filling of my choice and I'm always asked for the recipe. I usually prepare them on the stove top in a skillet to keep them warm and get my cheese well melted, but I'll place them in a 9×13 dish if making a larger amount and I'll cover them with aluminum foil and place them in the oven at 350°just till the cheese melts and I remove them quickly and serve. You will delight your family or friends with this dish. ❤
INGREDIENTS FOR SAUCE--------------------
4 Large Roma tomatoes
1/4 small/med onion
2 Serrano peppers
3 medium garlic cloves
1/8 tsp ground cumin
pepper (as needed)
1 Tbsp chicken bouillon
Salt as needed (adjust to your liking)
1/4 C. water
OTHER INGREDIENTS-----------------------
Vegetable oil (as needed)
Corn tortillas (I used 7)
1/4 C. finely chopped onions (for sauce)
4 Thin cut bacon strips (chopped)
5 large eggs
Freshly grated Monterey jack cheese (as needed)
2 Tbsp water for beaten eggs
Refried beans (for side)
TOPPINGS---------------------------
Finely chopped green onions
Avocado slices
Mexican
