Hi Everyone!
In this week's video I make my cozy homemade Rustic Tomato Soup. I have loads of tomatoes and basil in the garden so I've been trying to use it all up! I hope you enjoy this nourishing recipe as much as I do!

Homemade Rustic Tomato Soup
Ingredients:
25-30 Tomatoes (I used Roma)
1 tsp. Veggie Bouillon
2 to 3 cups filtered water
Seasonings of choice. I used Onion powder, Garlic powder, dry Parsley, dry Oregano, Paprika and Poultry seasoning. I would say I added 1 teaspoon of each.
One large handful of fresh basil leaves.
Tools:
1 large sauce Pan
1 cooking Spoon
1 tablespoon
Measuring Cups
One large, rectangular, baking dish
Blender
Method:
1. Preheat oven to 425°C .
2. Cut tomatoes in half and place in a large rectangular baking pan.
3. Roast tomatoes for 45 minutes- 1 hour at 425°C.
4. Once the tomatoes come out of the oven allow them to cool off slightly before blending them up.
5. Transfer to a blender and blend well.
6. Add the mixture to a saucepan and add bouillon, fresh basil (or dry) and other seasonings of choice.
7. Cook up the tomatoes for about 20-30 minutes at a medium to low heat. Mix every so often.
8. Once your tomatoes have thickened up, you can go ahead and add pasta or a little bit of rice to the soup just to jazz it up a little. I prefer adding rice, but sometimes I will add pasta like orzo into it. Also add the filtered water.
9. The rice or small pasta shouldn’t take too long to cook up because the heat of the tomato soup. I would keep an eye on it and mix everything up every so often. Keep the lid off of the pot as well.
10. Once my rice or pasta is cooked, then I like adding more fresh basil into my soup at this point and give it a mix. I feel that fresh basil elevates the soup.
11. Ladle into bowls and top with additional basil for garnish if desired.
Note: Depending on how thick you like your tomato soup you may have to adjust your water later on after it’s cooked for a while. It will also thicken as it cools off.
