Ingredients
Main: 300g Beef (cut into medium chunks).
Vegetables: Potatoes, Carrots (can also add beans or green peas).
Aromatics: Onions, green chilies (slit), ginger (julienned), and whole garlic cloves.
Spices: Black pepper powder, garam masala, whole spices (cloves, cinnamon, cardamom, bay leaf), and whole black peppercorns.
Liquid: Coconut milk (or coconut milk powder mixed in warm water) .
Garnish: Cashews and raisins fried in ghee .
Preparation Steps
Pressure Cooking the Beef:
Place the beef in a pressure cooker with a portion of the sliced onions, garlic, ginger, pepper powder, garam masala, salt, and thin coconut milk.
Cook on high flame for one whistle, then reduce to low and cook for 5 more whistles until the beef is tender.
Cooking Vegetables:
Add the potatoes and carrots to the cooked beef and pressure cook for one more whistle on high flame.
Sautéing Aromatics:
In a separate pan, heat coconut oil and sauté the whole spices, followed by the remaining ginger, garlic, green chilies, and onions until they soften (no need to brown them).
Combining and Thickening:
Add the cooked beef and vegetables into the sautéed mixture.
To get a thick consistency without cornflour, mash a few pieces of the cooked potato directly into the gravy.
Pour in thick coconut milk, let it heat through (do not boil vigorously), and turn off the stove.
Final Tempering:
Fry cashews and raisins in ghee and pour over the stew
Serving this stew with Kerala appam, idiyappam, puttu, or bakery bread
