Ingredients:
Sardines (medium-sized) - 6 nos
Turmeric powder - 1 pinch
Chilli powder - 1 pinch
Salt -
Small onions (15)
Gooseberries (2, deseeded)
Ginger (1 piece)
Green chillies (2, or bird's eye chillies for better flavor)
Peppercorns (1 tsp)
Curry leaves
Banana leaves (for wrapping)
Cooking oil
Preparation Steps:
1. Prepare the Fish: Clean and score the sardines. Lightly fry them with a pinch of turmeric, chilli powder, and salt to prevent them from breaking apart during grilling
2. Prepare the Masala: Crush small onions, gooseberries, ginger, green chillies, and peppercorns into a paste . Add salt and torn curry leaves, then mix well with your hands to combine the flavors
3. Prepare the Banana Leaf: Gently heat the banana leaves over a flame to make them pliable and prevent tearing when wrapping .
4. Assemble and Wrap: Spread a layer of the prepared masala on the banana leaf . Place the lightly fried sardines on top of the masala, then cover them with the remaining masala . Drizzle with the oil used for frying the fish, or a little coconut oil. Carefully fold and tie the banana leaf packet with banana fiber .
5. Grill: Heat a pan and lightly grease it with oil to prevent the leaf from burning. Place the wrapped fish on the pan, cover it, and cook on low heat, flipping occasionally until cooked through.
6. Serve: Once cooked, remove from the pan and carefully unwrap. The dish is ready to serve and is described as very tasty.
