Ingredients:
1 flat white cabbage (~1.2 kg) — or the same amount of sweetheart or savoy cabbage
600 g beef and lamb mince (50/50 mix)
4–5 large carrots, grated (~400 g)
1 large onion (~250 g) or 2–3 medium onions (~250 g total)
200 g basmati rice (well washed)
50 g tomato paste
100 g plum tomatoes (fresh or canned)
1 tsp ground cumin
1 tsp garam masala
1 tsp sweet paprika
Salt and freshly ground black pepper to taste
2 tbsp sugar
Fresh dill (~20 g), finely chopped
Step-by-step summary:
1️⃣ Choose a heavy pot — you’ll boil, fry, and cook everything in one pot.
2️⃣ Prepare your cabbage: cut out the tough core, boil it, and remove soft leaves after 4–5 minutes (cabbage ready in 7–9 minutes).
3️⃣ Prepare the onions: chop roughly and fry on medium heat until soft and juicy.
4️⃣ Prepare the mince mixture: fry beef and lamb mince together with grated carrots.
5️⃣ Make onion paste: blend fried onions with a splash of water.
6️⃣ Add to mince: plum tomatoes, tomato paste, cumin, garam masala, paprika, 2 tbsp sugar (balances acidity), salt and pepper.
7️⃣ Stir in onion paste and rice, then finely chopped dill.
8️⃣ Roll: place 1–2 tsp of filling on cabbage leaf, roll tightly like a straw, tuck sides in, turn over and tuck again.
9️⃣ Layer rolls in pot, cover with water (~1–1.5 cm above), bring to boil, reduce heat, simmer 35–40 minutes.
🔟 Serve with tomato sauce and fresh dill — done!
