Jamaican ackee and salt fish:
1. Clean fresh ackee and boil until tender but firm, add a pinch of salt to water.
2. Boil salt fish and pour off the water, repeat, to remove extra salt.
3. Dice onions, tomatoes, green bell peppers, small scotch bonnet pepper, two sprigs of fresh thyme.
4. Cool salt fish and remove all bones.
5. Sauté the onion, tomato, thyme and peppers together and add salt fish.
6. Drain cooked ackee and add to your sauté, sprinkle black pepper to taste, stir and let simmer for two minutes, then enjoy with ground provisions, bammy, festival or dumplings.
