Welcome to Oishii at Odell's, a new cooking show I make with Chef Miles Odell from The Counter at Odell's and Odell's Bagel in Denver, Colorado!
In this first episode, Miles will show you how he makes dashi. With dashi, the goal is to have it taste the same, every single day. Consistency is a big thing.
Miles has worked at Gion Sasaki (3 Michelin Stars) in Kyoto, Japan, Nobu, and Masa (3 Michelin Stars) in New York City. So, yeah, he knows how to make dashi. He actually made the dashi every day at Masa, and he wasn't allowed to drink coffee. So every day he noticed little differences and subtlety in the dashi. And now he's sharing what he knows with you.
