This viral air fryer potatoes recipe has been EVERYWHERE and I finally tried it... and WOW! These are seriously the crispiest, most flavorful potatoes I've ever made. Golden on the outside, fluffy on the inside, and SO easy to make in the air fryer. If you haven't tried this yet, you need to! This potato recipe is SO versatile! You can prepare the rub using your favorite herbs and spices. You can pair the crispy potatoes with ANY potato sauce or dip. I chose a creme fraiche & fresh dill sauce. This is a WINNER - my family wants me to cook this every week now!

✨ INGREDIENTS:
For the potatoes & the rub:
4-6 medium russet or Yukon gold potatoes
3-5 tablespoons olive oil (or melted butter)
1 teaspoon garlic powder
1 teaspoon paprika (hot or sweet, depending on your preferences
1 teaspoon dried thyme or oregano
Salt and pepper to taste
The Sauce:
1-2 sprigs of fresh dill (finely chopped)
200 ml creme fraiche
Freshly squeezed lemon juice (I used one lemon)
4-5 tablespoons of extra virgin olive oil
Salt and pepper to taste
📋 INSTRUCTIONS:
1. PREP THE POTATOES:
Wash and dry potatoes thoroughly
Cut them flat on one side (remove a thin layer only)
Place potato between two chopsticks or wooden spoons (I used kitchen bag clips - they did a good job)
Slice thin cuts (about 1/8 inch apart) across the potato - the chopsticks will stop your knife from cutting all the way through!
2. SEASON:
Mix olive oil with garlic powder, paprika, dried thyme, salt, and pepper in a small bowl
Brush mixture generously all over potatoes, getting into the slices
Let sit for 2-3 minutes to absorb flavors
3. AIR FRY:
Place potatoes in air fryer basket (don't overcrowd!)
Air fry at 180°C for 20-30 minutes (bigger potatoes call for 30-40 minutes of cooking)
At the 10-minute mark, check the potatoes and give them a little shake
Check for crispiness - they should be golden and crispy on top, tender when pierced with a fork
4. FINISH:
Optional: sprinkle with parmesan cheese in the last 2 minutes
Pour the creamy sauce on top of the potatoes just before serving
Serve immediately while hot and crispy!
💡 TIPS FOR SUCCESS:
Use even-sized potatoes for consistent cooking
Don't skip the chopstick trick - it's foolproof!
Thoroughly brush the potatoes, so that the rub enters all of the splits and crevices
Air fryer models vary - check at 10 and 20 minutes and adjust time as needed
🔄 VARIATIONS TO TRY:
Loaded: Top with bacon, sour cream, cheese, and green onions
Herb butter: Use melted butter with fresh rosemary and thyme
Spicy: Add cayenne pepper and top with jalapeños
Vegan: Use olive oil and nutritional yeast instead of parmesan
