Ingredients for the mixture :
1. Beaten Rice 2 cups
2. Jaggery - 4 tsp
3. Freshly Grated coconut - 1 Cup
4. Salt - 1/4 tsp or as per taste
Ingredients for the seasoning :
1. Coconut oil - 3 tsp
2. Mustard seeds - 1/4 tsp
3. Green chilly - 4
4. Red chilly - 1
5. Curry leaves - 5-6 leaves
6. Haldi - 1/4 tsp
Method to make the poha:
1. Add the ingredients for the mixture into a mixing bowl.
2. Mix well and keep aside so that the jaggery leaves water and moistens the mixture.
Meanwhile prepare the seasoning:
3. Add mustard seeds into heated coconut oil and wait for the seeds to pop.
4. Once the seeds pop add the green chilli and red chilli and give it a stir
5. Add the curry leaves at the end and stir for 40-45 seconds
6. Once the seasoning cools down, add it to the mixture kept aside
7. Mix the beaten rice but take care not to break it
8. Instant Poha is ready! Serves 2-3
