Surnali or Mangalore Sponge dosa is a typical Konkani cuisine, prepared for breakfast. This is a healthy dish, as there is no maida & soda added to it. Growing up, this was a weekend & Dwadashi special at our household, served with butter & honey.

Fermentation Time: 12 Hrs; Soaking Time: 4 Hrs;
Serves: White Dosa -5; Yellow Dosa -5
Ingredients for the batter:
• Rice – 1 cup
• Thin beaten rice – 1 cup
• Methi seeds – 1 tsp
• Grated coconut – ½ cup
• Butter milk – ½ cup
• Salt – as per taste
Additional ingredients for flavor of white batter:
• Green Chilly – 2 small
• Ginger – 3/4th inch of ginger
Additional ingredients for yellow batter:
• Jaggery – ½ cup
• Turmeric – ¼ tsp
General Method of preparation:
• Pre soak the rice, beaten rice & methi in water for 4 hrs.
• Grind all these soaked ingredients along with ½ cup butter milk & little water.
• Once ground, split the batter into 2 (for white & yellow variety) & add ¼ tsp salt to each variety.
• For yellow dosa, use one half of the batter & add ½ cup jaggery & ¼ tsp turmeric to it and grind well.
• Allow both batters to ferment for 12 hours.
Dosa Preparation:
For white Dosa –
• Grind 3/4th inch ginger & 2 small chilies into paste & add to one half of fermented batter. This gives the dosa a tangy & spicy flavor.
• Spread the dosa batter on a hot dosa pan. (Ensure to keep the batter consistency thick)
• Cover with lid & cook on low flame for 1 – 1.30 mins.
• Add ghee and remove the dosa. Do not flip the dosa over.
• Serve hot with butter & honey.
For Yellow Dosa
• Add ghee to the hot pan & spread the dosa. (ensure to keep the batter consistency thick)
• Cover with lid & cook on low flame for 1-1.30 mins.
• Add ghee and remove the dosa. Do not flip the dosa over.
• Serve hot with butter & honey.
