This video is about how to make TUSCAN GARLIC CHICKEN.
SERVES 3-4 PEOPLE
1/2 pound fettuccine pasta boiled al dente and drained
2 Chicken breasts split and pounded flat if necessary
3 Tbsp. Italian seasoning
1 red bell pepper julienne cut
1/2 cup minced onion / or shallots if you want
5 toes garlic sliced
1/2 -1 cup olive oil
4 Tbsp. butter
2 Tbsp. butter
1-10 ounce bag baby spinach
1 Pint of heavy cream or substitute half and half if you want.
Salt & Pepper
All purpose flour (I use a shaker)
1 1/2 Tbsp. flour for sauce
1 cup white wine
1 Cup Parmesan Cheese freshly grated!
INSTRUCTIONS
Coat chicken breasts with salt, pepper and Italian seasoning.
Sprinkle with all purpose flour.
In a skillet, melt 2 Tbsp. butter and some Olive Oil.
Brown off all chicken breasts and reserve.
Starting with a clean skillet with higher sides, melt 4 Tbsp. butter and some olive oil.
Sauté onions and garlic for two minutes. Add bell pepper and sauté for a minute or two.
Add flour and blend in well.
Add white wine and begin adding in spinach.
Add cream and cook for a few minutes.
Add fresh grated parmesan cheese.
The cheese will melt in well.
Adjust the thickness of the sauce with white wine or by adding more cream.
Serve over pasta and you're finished!
