*Ingredients
1 Garlic
2 Scallions
3 Ginger
4 Bird's eye chili
5 Onion
6 Green bell pepper
7 Carrot
8 Ground meat
9 Salt
10 Black pepper powder

1 Mince garlic and set aside.
2 Separate the white and green parts of the scallions and mince them separately and set aside.
3 Mince ginger and set aside.
4 Mince Thai chili and set aside.
5 Mince onion and set aside.
6 Mince green bell pepper and set aside.
7 Cut carrots into rice-grain-sized pieces and prepare rice in a 1:1 ratio.
8 Mince pork and set aside. (Pork belly is better.)
9 Heat oil in a wok.
10 Stir-fry the ground pork until golden brown and the pork fat is rendered.
11 Add minced garlic and ginger and stir-fry.
12 Add cooking wine and sauté until fragrant.
13 Add a small amount of soy sauce and sauté until fragrant (to keep the carrots orange-yellow).
14 (Carrot 1) Add one-third of the minced carrots to the wok and stir-fry with pork fat until fragrant.
15 Add salt to taste.
16 To preserve the carrot's color, use only salt for seasoning (add in small amounts several times) instead of oyster sauce.
17. Add onions and green peppers and stir-fry evenly.
18. Add leftover rice and stir-fry evenly.
19. Stir-frying carrots in oil significantly increases the absorption rate of beta-carotene, thus significantly improving the utilization rate of vitamin A.
20. Pork is rich in protein and B vitamins; the combination of these nutrients complements the antioxidant properties of carrots.
21. Therefore, the fat-soluble nutrients in carrots, along with the energy and protein provided by pork, work together to create a fried rice that is both delicious and nutritious.
22. (Carrot 2) Add 1/3 of the chopped carrots and stir-fry evenly.
23. Add salt to taste.
24. (Carrot 3) After turning off the heat, add chopped scallions and 1/3 of the chopped carrots.
(The last carrot is added to enhance the aroma and texture.)
25. After turning off the heat, add black pepper and oligosaccharides and stir-fry evenly.
26. Fry the egg.
27. Done.
