*Ingredients
1. Garlic

3. Carrot
4. Small pepper
5. Onion
6. Green bell pepper

1 Mince garlic and set aside.
2 Mince scallion (white part only) and set aside.
3 Mince carrot and set aside.
4 Dice small pepper and set aside.
5 Mince onion and set aside.
6 Dice green bell pepper and set aside.
7 Remove the stem from eggplant and dice it and set aside.
8 Dice pork loin and set aside.
9 Marinate the meat: salt, Shaoxing wine, cornstarch, cooking oil
10 Dry-fry one-third of the diced eggplant in a pan and set aside.
11 (Eggplant 1) Dry-frying the eggplant without oil will evaporate the moisture and make it chewier.
12 Heat the pan with cold oil.
13 Stir-fry the diced meat.
14 Add one-third of the diced eggplant and stir-fry evenly.
15 (Eggplant 2) Stir-fry eggplant in lard for a rich aroma.
16. Add minced garlic and chopped scallion whites and stir-fry.
17. Sauté with cooking wine until fragrant.
18. Sauté with soy sauce until fragrant.
19. Add diced green bell pepper and diced onion and stir-fry evenly.
20. Add leftover rice and stir-fry evenly.
21. Add diced carrot and diced chili and stir-fry evenly.
22. (Finally, add one of the remaining three eggplants and the dry-fried (eggplant 1) without oil and stir-fry evenly.
