EGGNOG INGREDIENTS
3 egg yolks
80 g sugar
235 ml milk
2 cloves
cinnamon stick
200 ml heavy cream
1 tsp vanilla
nutmeg
40 ml rum or other alcohol
1 ½ egg whites
EGGNOG METHOD
1. Heat the milk together with the cinnamon and cloves.
2. In a bowl, mix the sugar and egg yolks and beat them until the yolks turn white and slightly thicken. Temper them with the milk and return them to the rest of the milk. Cook them until they reach 70ºC, stirring constantly.
3. Once the mixture has reached the required temperature, remove them from the stove and add the cream. Stir and strain the mixture. Leave to cool.
4. Once the egg mixture has cooled, add the rum, vanilla and nutmeg and mix.
5. Beat the egg whites until stiff with 1 tbsp of sugar and add them to the cold mixture, mix 1/3 at a time and the egg punch is ready to serve. Before serving, garnish with grated nutmeg or cinnamon.
