The story of bourbon begins in the late 18th century, with early American settlers, many of Scottish and Irish descent, who brought their distilling traditions to the fertile lands of what would become Kentucky. Finding corn to be an abundant crop, they adapted their methods to create a whiskey with a distinctively sweet flavor profile. This "corn whiskey" was initially a rough and fiery spirit, but distillers soon discovered that aging it in charred oak barrels imparted smoother flavors and a rich amber color. The name "bourbon" emerged somewhat organically, possibly derived from Bourbon County, Kentucky, a major shipping point for the whiskey, or perhaps from Bourbon Street in New Orleans, a key market for the spirit.

As the 19th century progressed, bourbon production grew and evolved. Distillers began to refine their techniques, experimenting with different mash bills (the mix of grains used in fermentation) and aging processes. The practice of using new, charred oak barrels became a defining characteristic of bourbon, contributing to its unique flavor. The spirit's popularity spread throughout the United States, solidifying its place in American culture. However, the industry faced a major setback with the advent of Prohibition in 1920, which forced distilleries to close and nearly wiped out bourbon production altogether.

Following the repeal of Prohibition in 1933, the bourbon industry slowly began to rebuild. Over the following decades, bourbon experienced periods of both boom and bust, facing competition from other spirits and changing consumer preferences. However, in recent years, bourbon has undergone a remarkable resurgence, experiencing a renewed appreciation for its rich history, craftsmanship, and complex flavors. Today, bourbon is recognized as a distinctly American spirit, with strict legal standards defining its production, and it enjoys global popularity among whiskey enthusiasts.
