材料配方 Ingredients:
蛋黃 3個 / Egg yolk 3 pieces
植物油 35克 / Vegetable oil 35g
鮮奶 40克 / Milk 40g
低筋麵粉 65克 / Cake flour 65g
蛋白霜Meringue:
蛋白 3個 / Egg white 3pieces
糖粉 55克 / Icing sugar 55g
檸檬汁 6克 / Lemon juice 6g
製作步驟 Instructions:
1.預熱烤箱110攝氏度。
Preheat oven to 110°C.
2.將蛋黃和植物油放入碗中攪拌至油溶解到蛋黃里和充分乳化,然後加入鮮奶繼續混匀, 之後加入過篩的低筋麵粉攪拌均勻即可,不用過度攪拌。
Place the egg yolks and vegetable oil in a bowl and stir until the vegetable oil is dissolved in the egg yolks and fully emulsified. Add fresh milk and continue mixing. After that, add the sieved cake flour and stir evenly. Remember do not over stirring the batter.
3.將蛋白放入攪拌盆中, 用打蛋器打至出現大泡泡,加入檸檬汁和1/3的糖粉攪拌至出現細泡泡后,再加入另外1/3的糖粉繼續攪拌, 之後加入剩餘的糖粉攪拌至堅挺狀態呈現小尖勾。
Place the egg whites in the mixing bowl, beat until large bubbles appear then add lemon juice and 1/3 of the icing sugar and beat until fine bubbles appear. After that, add in another 1/3 of the icing sugar and continue mixing, then add the rest of the icing sugar and beat until it shows a small stiff peak foam.
4.將蛋白霜分次加入蛋黃麵糊里,用翻拌的手法混匀。請勿過度攪拌以避免消泡。
Gradually add the meringue to the egg yolk batter and gently mix well by turning and fold in method. Remember do not over mix the batter to avoid defoaming.
5.將模具里放入紙杯。將蛋糕糊倒入紙杯里, 然後用木籤或牙籤攪拌蛋糕糊,之後把烤盤往桌子上輕敲幾下排出空氣。
Put the cupcake cups in the baking tray. Pour the batter into the cupcake cups, use a wooden skewer or toothpick to stir the batter to avoid large bubbles. Then gently tap the baking tray on the table a few times to remove air bubbles.
6.將蛋糕烤盤放在烤箱的最底層。預熱烤箱110攝氏度。烘烤時間:
-110攝氏度,烘烤30分鐘。
-30分鐘后,將110攝氏度調高至120攝氏度,然後繼續烘烤20分鐘。
-20分鐘后,將130攝氏度調高至145攝氏度,繼續烘烤10分鐘。
-10分鐘后,將145攝氏度調高至155攝氏度,繼續烘烤10分鐘。
總共烘烤時間是70分鐘(根據自己的烤箱溫度調整時間)。將木籤或牙籤插入蛋糕中,如果牙籤拿出來時是乾净及沒有濕麵糊,那麽威風蛋糕就好了!
Put the baking tray on the bottom of the oven. Preheat the oven 110°C. Baking time as below:
-110°C, bake for 30 minutes.
-After 30 minutes, turn the temperature to 120°C, continue bake for 20 minutes.
-After 20 minutes, turn the temperature to 145°C, bake for another 10 minutes.
-After 10 minutes, turn the temperature to 155°C, bake for another 10 minutes.
Total baking time is 70 minutes (Everyone's oven is different, you have to adjust the temperature and baking time) . To check if the cake is fully cooked, insert a wooden skewer or toothpick into the middle of the cake and if it comes out clean with no wet batter then its done!
7.从烤箱中取出, 然後將杯子蛋糕轉移到凉架上晾涼。完全放涼後,就可以享用蛋糕啦!
Remove the cupcakes from the oven, and transfer the cupcakes to a cooling rack to cool down. After the cupcakes completely cool down, then it’s ready to serve!
