NOTE:
the proportions are for about 10-12 medium sized pancakes
INGREDIENTS
For Pancakes:
90 g green buckwheat ( soaked in water overnight)
1 banana
1 small pear or a 1/2 of a big one ( you can try also this with an apple or without any fruits)
90 g (~6 tbsp) plant milk, i used oat milk
3 tbsp rice flour
1 tbsp lemon juice
1 tsp poppy seeds (optional)
1/2 tsp cinnamon powder
1/4 tsp ginger powder (optional )
pinch of baking soda
For Easy Creamy Nut Topping:
2 tbsp vegan cream
1 tbsp maple syrup
2 tbsp plant milk (i used oat milk)
2 tsp hazelnut paste (or other nut paste/butter)
NOTES
You need to soak the buckweat in a bowl in water overnight or pour with boiling water for 15-20 minutes and cover with a lid.
INSTRUCTIONS
1. Add in blender soaked and rinsed green buckwheat, banana, rice flour, cinnamon & ginger powder, poppy seeds, a pinch of baking soda and milk.
2. Mix it until well combined.
3. Then cut the pear into small cubes( cut the skin too).
4. Add pear chunks into the pancake batter and fold evenly.
5. Grease the pan with coconut oil or some other oil.
6. Fry the pancakes for a few minutes on each side, on medium heat until golden brown.
7. Serve the pancakes with your favourite toppings or make my Easy Creamy Nut topping!
Creamy Nut Topping:
1. Add in a bowl vegan cream, maple syrup, hazelnut paste, milk.
2. Whisk until smooth texture! Thats it!
Note: if you want the topping to be thicker, then add more vegan cream. If more liquid, then add more milk. Everything depends on your preferences 💫
