On this the second leg of our road trip we rolled up in the Global Food Quest campervan to The New Forest in Hampshire on the hunt for some wild mushrooms to create the wildest foragers breakfast. It was early in the season so I had my eyes open for a number of species including boletes, agaricus and marasmius oreades aka the fairy ring champingnon amongst others. Although the woodlands themselves were sparse our luck was in, and we foraged an array of field mushrooms from the agaricus species. A species of fungi most beginners will be familiar with, although it's a tricky species to begin one's foraging career as there are a number of toxic lookalikes that a would be new forager could confuse them with. In particular a mushroom commonly known as 'the yellow stainer' recognisable as toxic through this very attribute of its bruised flesh staining yellow.
With our bag of foraged field mushrooms we made back to the Global Food Quest campervan and cooked the ultimate foragers mushrooms on toast for breakfast. Using heaps of butter, sour cream, mushrooms and parsley with freshly toasted brioche for our base I highly recommend you have a go cooking this for breakfast.
Warning: Never go picking mushrooms without professional guidance.
