I didn't really need the double capacity for six rather small slabs, but I wanted to do more than measure the temps on two grates. And while I am at it, why not have a nice meal. If I use rib racks, I can easily cook 16 slabs with this method – enough for a crowd.
For the ribs, I used a slightly spiced up (added some chipotle) version of Meathead’s Memphis Dust, finde the recipe here: https://amazingribs.com/tested-recipe...
I only use one teaspoon of this rub per side, because I found if you use more, you overpower the taste of the meat and the ribs turn very dark because of the high amount of sugar.
