This is a very lightweight, easy to cook and tasty meal, healthy too.
It consists of fried eggs along with parsley-potatoes and fresh sauteed spinach.
This meal is fast, good and healthy.
You need per Person:
For frying Eggs:
1-2 Eggs
little Butter for frying
for Potatoes:
3-4 Potatoes
1 full ts. Salt
For the Spinach:
70-100 g fresh Spinach
1/4 Onion
1 small Garlic Clove
1 tbls Creme
1 ts Veggi Broth Powder
Start off with Potatoes, bring them to a boil in salty water.
Meanwhile prepare the Spinach. First fry onions and garlic, put spinach into pot, stir until spinachleaves collapse, add broth powder and creme, go on stirring a little - ready
Then check if potatoes are ready. If so, drain the water, add little butter and chopped parsley, gently stir, ready.
Then put little oil and little butter into preheated (medium heat) pan, crack eggs into it and cover with lid. Let the eggs fry, until the eggwhite is firm and the yolk is still fluid. Ready.
Now decorate these three onto plate - bon appetit!
