🥕 Carrot Cake Blondies with Coconut Cream Cheese Frosting
Ingredients
Carrot Cake Blondies
½ cup melted butter (1 stick)
¾ cup light brown sugar
¼ cup granulated sugar
2 large eggs, room temperature
2 tsp vanilla extract
1¼ cups all-purpose flour
1 tsp cornstarch
½ tsp baking powder
½ tsp salt
½ tsp ground cinnamon
1½ cups grated carrots
¾ cup chopped pecans
1 cup toasted coconut
Coconut Cream Cheese Frosting:
8 oz cream cheese, room temperature
¼ cup unsalted butter, room temperature
¼ cup canned coconut cream
3 cups powdered sugar
1 tsp vanilla extract
¼ tsp salt
Toasted Coconut:
2 cups toasted coconut (1 cup for batter, 1 cup for topping)
Instructions
1. Toast the Coconut
Toast shredded coconut in a dry skillet over medium heat until lightly golden. Stir often and watch closely—it toasts fast!
2. Make the Blondie Batter
Preheat oven to 350°F. Grease or line a 9x9 metal baking pan with parchment paper or nonstick spray.
In a large bowl, whisk together melted butter, brown sugar, granulated sugar, and vanilla. Add eggs and whisk until fully combined. Whisk in flour, cornstarch, baking powder, salt, and cinnamon.
Add grated carrots, pecans, and 1 cup of toasted coconut. Stir to combine.
3. Bake
Spread the batter evenly in your prepared pan.
Bake for about 22 minutes, or until a toothpick comes out mostly clean.
Let the blondies cool completely in the pan before frosting.
4. Make the Frosting
Beat cream cheese, butter, and coconut cream until smooth and fluffy.
Gradually add powdered sugar, one cup at a time, until creamy and thick.
Beat in vanilla and salt until the frosting is light and smooth.
5. Assemble & Serve
Spread frosting over cooled blondies.
Top with the remaining 1 cup of toasted coconut.
Slice into squares and enjoy!
