Bihari Kebab Paratha Roll
Ingredients:
• Boneless chicken (cubed) – ½ kg
• Garam masala powder – 1 tsp
• Garlic – 1 tsp
• Ginger – 1 tsp
• Red chili powder – 1 tsp
• Oil – 6 tbsp
• Raw papaya – 5 tbsp
• Charcoal – 1 piece
• Parathas – 6
• Ajwain (carom seeds) – 2 tsp
• Salt – 1 tsp
For Chutney:
• Tamarind pulp – ½ cup
• Salt – ½ tsp
• Coriander leaves – 4 tbsp
• Green chilies – 3
• Mint leaves – 4 tbsp
• Yogurt – ⅓ cup
• Mayonnaise – 2 tbsp
• Red chili powder – 1½ tsp
• Onion slices – 1
Method:
1. Marinate the boneless chicken cubes with garam masala, red chili powder, garlic, ginger, salt, raw papaya, and ajwain. Keep aside for 3 hours.
2. Heat charcoal and expose the chicken to the smoke for a smoky flavor.
3. Heat oil in a pan and fry the chicken for 12 minutes. Set aside.
4. For the chutney, mix all the chutney ingredients in a bowl.
5. Fry the parathas lightly and spread the chutney on them.
6. Layer onion slices and the fried chicken on top of the paratha.
7. Cover with butter paper and roll the paratha tightly.
8. Serve hot with extra chutney
Shami Club Sandwich
Ingredients:
• Sandwich bread slices – 6
• Oil – 6 tbsp
• Eggs – 4
• Cheese slices – 6
• Mayonnaise – 6 tbsp
For Shami Kebab:
• Chicken mince – 250 g
• Garam masala – 2 tsp
• Garlic – 1 tsp
• Ginger – 1 tsp
• Onion (medium) – 1
• Oil – 8 tbsp
• Red chili powder – 1 tsp
• Potato (large) – 1
• Boiled chickpeas – 1 cup
For Sandwich Filling:
• Tomato slices – 3
• Lettuce leaves – 3
• French fries – 3 cups
Method:
For the shami kebab, combine all ingredients with 2 liters of water in a pot and bring to a boil.
Reduce heat and cook for 20 minutes until water evaporates. Blend the mixture into a smooth paste.
Shape into small patties and fry in hot oil for 6 minutes.
In a pan, heat oil and fry the eggs with a little salt to make omelets.
To assemble the sandwich:
• Spread mayonnaise on a bread slice and place a shami kebab on top.
• Add a cheese slice and a lettuce leaf.
• Place another bread slice, then top with omelet, tomato slices, and another cheese slice.
• Cut into 4 pieces and serve hot.
