Red Velvet Cake #2
1/2 C. Shortening
1 1/2 C. Sugar
2 Eggs
1 T. Cocoa Powder
2 oz. Liquid Red Food Coloring (I used .61 oz. Gel Food Coloring)
1 t. Salt
1 t. Vanilla
1 C. Buttermilk
2 1/2 C. Cake Flour
1 1/2 t Baking Soda
1 1/2 t. Vinegar (I used Distilled White Vinegar)
Cream together Shortening, Sugar, Eggs, Cocoa Powder, Salt, Vanilla, and Food Coloring until very smooth.
Add Buttermilk alternating with Flour.
In a small bowl, combine Baking Soda and Vinegar, add to batter.
Bake at 350* in 3 - 8 inch Cake pans for 30-35 minutes or bake 24 Cupcakes for 15-19 minutes or until toothpick inserted in center comes out clean.
Allow to cool before frosting.
Cream Cheese Frosting
8 oz. Cream Cheese, softened
2 C. Powdered Sugar
1/4 C. Butter, melted
2 t. Vanilla
Combine all ingredients until smooth.
