पनीर बटर मसाला तयार करण्यासाठी लागणारे साहित्य:
१/२ किलो पनीर
४ टोमॅटोची प्युरी
२ भाजलेल्या कांद्यांची प्युरी
१५ ते २० काजूची प्युरी
बटर
आलं-लसूण पेस्ट
१/२ वाटी दही
गरम मसाला
लाल मिरची पावडर
कोथिंबीर
कसुरी मेथी
मीठ
हळद पावडर
तमाल पत्र
जिरे
वेलची
मसाला वेलची/मोठी वेलची
मिरे
लवंग
दालचिनी
Ingredients required to make Paneer Butter Masala:
1/2 kg paneer
puree of 4 tomatoes
puree of 2 fried onions
puree of 15 to 20 cashews
butter
ginger garlic paste
1/2 bowl curd
garam masala
red chilly powder
coriander
dried fenugreek leaves
salt
turmeric powder
malabar leaf
cumin seeds
cardamom
masala cardamom
pepper
clove
cinnamon
Method:
First step is to make the gravy.
Boil 4 tomatoes, peel off, and make puree.
Fry 2 chopped onions and make puree.
Soak 15 to 20 cashews for 10 minutes and make puree.
Put 2 tsp oil and 25 gm butter in a container.
Once the oil is hot, put malabar leaf, cumin seeds, cardamom, masala cardamom, pepper, clove, cinnamon, and onion to the container.
Fry the mixture till the onion turns red.
Once the onion turns red, you can remove the spices like malabar leaf, masala cardamom, etc. This is optional.
Add ginger garlic paste and onion puree to the mixture.
Mix well and let it fry for some time.
Add 2 tsp red chilly powder, 1/2 tsp turmeric powder, and 1 tsp salt.
Cook it for some time till the mixture does not stick to the container.
Add tomato puree and 1/2 bowl curd to the mixture.
Make sure to stir the mixture well repeatedly so that the curd does not split.
Add cashew puree to the mixture. It helps in stopping curd from splitting.
Add 1 tsp garam masala to the mixture.
Add some water and let the gravy cook for 10 minutes.
Meanwhile the gravy is cooking, we can shallow fry the paneer in a pan.
Add 25 gm butter to the pan.
Add paneer cut in cubes to the pan.
Sprinkle 1/2 tsp red chilly powder, 1/2 tsp salt, and 1/2 tsp turmeric powder on paneer and let it fry till paneer turns yellowish.
Add paneer to the gravy and mix well for 2 minutes.
To balance the taste of the gravy, add 1 tsp sugar to the gravy and mix well.
Add dried fenugreek leaves and coriander leaves for garnishing.
Add fresh cream to the gravy and let it cook for 5 minutes.
Your Paneer Butter Masala is ready.
