Recipe for colourful puris:
– Red (Beetroot), Green (Methi), Yellow (Turmeric) and Plain Poori
You can make all four together for festivals, kids’ plates, or special breakfasts

Colourful Poori – Combined Recipe
Basic Ingredients (for all puris)
• Wheat flour (गेहूं का आटा) – 4 cups (divide into 4 parts)
• Salt – as per taste
• Oil / ghee – for frying
• Water – as needed

1. Red Poori (Beetroot Poori)
Ingredients
• 1 cup wheat flour
• Beetroot paste – 3 tbsp (boiled & grated, then blended)
• Carom (Ajwain)- ¼ tsp
• Sesame seeds (Til)- ¼ tsp
• Turmeric ( Haldi)- ¼ tsp
• Chili flex- ¼ tsp
• Chili powder- ¼ tsp
• Gram flour (Besan)-1 tsp
• Salt – to taste
• Desi Ghee/Oil- 2 tsp- for crispiness
• Oil- for frying the pooris
Method
1. Mix above spices in 1 cup wheat flour and add salt to taste.
2. Add beetroot paste and oil.
3. Knead a tight dough (add very little water if needed).
4. Rest for 10 minutes.
5. Roll and fry in medium-hot oil till puffed and crisp.

2. Green Poori (Methi Poori)
Ingredients
• 1 cup wheat flour
• Fresh methi leaves – ½ cup (finely chopped)
• Methi paste – 2 tbsp (optional, for strong colour)
• Cumin seeds- ¼ tsp
• Red chili powder- ¼ tsp
• Carom (Ajwain)- ½ tsp
• Chili flex- ¼ tsp
• Turmeric ( Haldi)- ¼ tsp
• Coriander powder- ½ tsp
• Sesame seeds (Til)- ¼ tsp
• Gram flour (Besan)-1 tsp
• Salt – to taste
• Desi Ghee/Oil- 2 tsp- for crispiness
• Oil- for frying the pooris
Method
1. Mix the above spices in 1 cup flour, salt to taste, chopped methi & methi paste.
2. Add oil and knead tight dough.
3. Rest 10 minutes.
4. Roll and deep fry till golden green.

3. Yellow Poori (Turmeric Poori)
Ingredients
• 1 cup wheat flour
• Turmeric powder – ½ tsp
• Cumin seeds- ¼ tsp
• Sesame seeds- ½ tsp
• Chili flex- ½ tsp
• Coriander powder- ½ tsp
• Carom (Ajwain)- ½ tsp
• Fennel Seeds- ½ tsp
• Salt – to taste
• Desi Ghee/Oil- 2 tsp- for crispiness
• Oil – to fry pooris
Method
1. Mix all above spices into 1 cup of wheat flour, & salt.
2. Add oil/ghee and water, knead tight dough.
3. Rest dough.
4. Roll and fry till bright yellow.

4. Plain Poori
Ingredients
• 1 cup wheat flour
• Salt – to taste
• 1 tsp oil
Method
1. Mix flour, salt & oil.
2. Knead firm dough with water.
3. Rest 10 minutes.
4. Roll and deep fry till puffed.

Frying Tips
• Oil should be medium hot, not very high.
• Press puri gently with slotted spoon to puff.
• Fry all puris separately to maintain colour.
• Drain on tissue paper.

Serving Suggestions
• Serve with aloo bhaji, chole, paneer curry
• Perfect for kids’ tiffin, Holi, Navratri, birthday platters
