An Andhra-style egg pulusu is a spicy and tangy curry made with boiled eggs simmered in a tamarind and onion-based gravy.
Ingredients
For the eggs:
4–6 eggs, hard-boiled
½ tsp turmeric powder
1/2 tsp red chili powder
1 tbsp oil
pinch of salt
For the curry:
2 tbsp oil
1 tsp poppy seeds
1 tsp stone flower
1 tsp kasuri methi
1 dry red chili
3 large onions, finely chopped
1 tbsp ginger-garlic paste
3 tomato, puréed or finely chopped
1 tbsp garam masala powder
1 tsp red chili powder (adjust to taste)
½ tsp turmeric powder
1 cup tamarind pulp
Salt to taste
Fresh coriander leaves for garnish
