Ingredients (Serves 2):
For the Roasted Bowl:
• 1 cup cauliflower florets
• 1 cup chickpeas (cooked & drained)
• 1 medium potato, diced
• 1 tbsp cornstarch
• 1 tbsp olive oil
• ½ tsp paprika
• ½ tsp garlic powder
• ½ tsp salt
• ¼ tsp black pepper
For the Tahini Herb Dressing:
• 2 tbsp tahini
• 1 tsp maple syrup
• 1 small garlic clove, minced
• ¼ tsp salt
• ½ tsp paprika
• 1 tbsp fresh parsley, chopped
• Juice of ½ lemon
• 2-3 tbsp water (adjust for consistency)
Instructions:
• Prepare the Veggies:
• Preheat oven to 400°F (200°C).
• In a bowl, toss cauliflower, chickpeas, and potatoes with olive oil, cornstarch, paprika, garlic powder, salt, and pepper.
• Spread them evenly on a baking sheet.
• Roast:
• Bake for 25-30 minutes, flipping halfway, until crispy and golden brown.
• Make the Dressing:
• In a small bowl, whisk together tahini, maple syrup, garlic, salt, paprika, parsley, lemon juice, and water until smooth.
• Assemble the Bowl:
• Divide the roasted veggies into two bowls.
• Drizzle generously with the tahini herb dressing.
• Garnish with extra parsley and enjoy!
