Stuffing (mahshi) different kind of vegetables, including vegetable leaves, with rice and meat is one of the specialties in Mediterranean cuisines. Each region has a different recipe. It can be stuffed peppers, stuffed zucchini, stuffed eggplants, stuffed tomatoes, onions, potatoes, grape leaves, cucumber, carrots and much more! Actually any type of vegetable stuffed or wrapped.
Stuffed cabbage rolls (malfouf or mahshi malfouf) is not only one of these dishes, it is one of the most flavored and delicious options among them all. The Arabic name of cabbage is “malfouf”, however this word originally means wrapped up.
The recipe of today's video original Palestinian way of making stuffed (mahshi) cabbage rolls. It is easy, simple and delicious.
Ingredients:
Cabbage - 1 Large Head (2-3 kgs)
Ground lamb - 450 g
Short Grain Rice - 1 Cup (300 g)
Parsley - 4 Tablespoon
All Spice - 1 1/2 Teaspoon
Black Pepper - 1/2 Teaspoon
Fresh mint - 3-4 tbsp
Dry Mint - 1 teaspoon
Garlic - 2 Heads of garlic
Garlic - 3-4 Cloves - Crushed
Onion - 1 medium onion
Tomato juice or tomato sause
Lemon Juice - 2 lemons
Instructions:
First we have to remove the core of cabbage and place it upside down in a boiling water for few minutes, turn the cabbage up and blanch for another 2 minutes, the leafs will be removing easily. Repeat with the rest of the cabbage.
For the Stuffing: In a bowl, add rice and ground lamb, parsley, mint, onion, allspice, black pepper, crushed garlic, tomato sauce, lemon juice, salt to taste and olive oil. Mix together well.
The big cabbage leafs we have to cut to a few smaller parts. Take each cabbage segment and place about a 1-2 teaspoons of stuffing and roll the leafs. dont put too much stuffing, the rice while cooking will double in size.
Cook the stuffed Cabbage Rolls In a pot, place each roll with the end under so that doesn't unravel. For each layer sprinkle with a little salt and several clove of garlic. Until you finish with all the stuffing and cabbage. Pour water/ or chicken ( meat ) stock until it reaches the top of the malfouf(Cabbage Rolls).
Place a heat resistant plate or kitchen weight, cover the pot with its lid.
Cook on medium heat for 45-60 minutes. Check to see if the rice is cooked, and use a fork to see if the cabbage is very tender then it is ready!
Can be served with laban (fresh yogurt)
NOTE!
You can cook the stuffed cabbages in two ways, Both are delicious but slightly different. The one in the video is served with yogurt sauce. The other method is without the garlic sauce but the stuffed cabbages are cooked in tomato sauce for more flavor.
